HI. I'd like to get a ccw. If I live in one county for 8 months then work on weekends in the summer (2 months) and live there on the weekends, in another county, could I claim residency in that summer residence (even if its only weekends)?

Ask the county in question.
I suspect the answer will be 'no, you don't live here', but without asking, you won't actually know.

You need to go the county sheriff in the county where you permanently reside. Which would be your address with USPS or DMV. The permit is valid in the whole state so if your resident county issues you could carry in the other county in the summer also.
