I can tell you that Springfield Custom Shop puts the STI polymer trigger on their competition-only trigger jobs. Wife and I have 3 lb. custom shop trigger jobs and like the STI trigger, the short version in our case.

Grieder triggers are nice and very inexpensive. Not plastic if that's what you're looking for though. They're made of aluminum. Got them in three guns, and wouldn't hesitate to use them again.

If you're talking only about the hardware, SVI seems to have great choices. How much curve, if any, how much protrusion, skeletonized / solid, etc, etc.
But the h/w means nothing if the trigger job isn't commensurate. I'd rather have a piece of plastic with a JoJo Vidanes trigger job than a water-cut titanium miracle by SVI where the trigger job was done by a hack (or worse, myself).

1911 Custom Trigger
I put guncrafter industries in all of my wide bodies. For the singlestacks I like the Wilson combat or Nighhawk triggers. I don't like the polymer triggers as in my experience there is too much vertical play. I like over sized triggers that need fitting for no play at all.
