Processing isnt that tough, you can do it yourself with a couple of sharp knives and a sawzall.
Therer are plenty of videos on U Tube.
We did our first last fall a deer and two pigs and it wasnt that difficult.

On the right side of this page there are several processors listed.

I just had a boar processed at Bree's in Garden Grove and was very pleased.
The two in Glen Avon would be closer to you.

I used to cut up my own deer so I know it's not hard but I'm also looking to have some sausage done and would like to have some hams smoked.

Thanks for the link Hallx7 I'll check that place out but I would like someplace a little closer.

The Glen Avon ones are off of the 60 north of Riverside. I think those will be as close as you may get. I've looked at a much larger list of processors in the state and don't recall seeing anything closer to you than those 2

sausage is easy to do at home, just a matter of finding GOOD casings. And kitchenaid mixers are a joke for meat grinding, need something more robust.

I understand on the smoker though. cheap smokers are junk.

Take a look at LEM Products. They make butchering equipment specifically for wild game processing. Their instructional video's are pretty good.

I remember seeing a butcher across the street from bright spot pawn a couple years ago. Probably still there. Out in Riverside.

Not sure if they're still open but cliffs meats in San jacinto used to do it. They're just off of seventh and state by the agri empire building.
