Both days are good to attend for different stuff. If you want common ammo and other non-rare stuff, go Saturday before it's all sold. Vendors buy a certain amount of this type of stuff to peddle at the shows, and when it's gone, they re-order.
If you want unusual stuff or a particular gun, go Sunday. Although off-the-wall stuff is sometimes priced too low and sold the instant someone sees it, it's less likely these days with crazy ammo and gun prices. But there might be a gun or other high-dollar item that the vendor would rather sell at a big discount than haul back home. Especially if it's been a bad show for them (BTDT).
