Not sure if it will help but I recently became interested in Japanese Kitchen knives and have learned some amazing info regarding metals, blade parts, HR (hardness rating) from a site called KitchenKnifeforums.

I have no affiliation with that site but most are hard core chefs who use blades everyday and they give info on the above plus great sharpening info which is my next goal.
